Cutting base for push guitar 60x60cm: it is ideal for cutting cremini and ganache with dried fruit or hard small pastry products even at low temperatures.
The advancement of the table is done manually through a handwheel operated by the operator who can control the speed of cutting. The short wire guarantees a higher mechanical resistance and therefore allows to cut in precise portions also very hard or frozen dough. Easy to clean, this tool requires no maintenance.
