The Origami mold design was created by Melissa Coppel in collaboration with our designers. The praline has a shape that is very reminiscent of Origami, which is the art of folding paper from the ancient Japanese term. Because of its shape, the praline gives free rein to the creativity of any chocolatier, who can also combine the different pralines to form a creative circle.
A world-renowned chocolatier and one of the few women at the top of the industry, Melissa Coppel has had many high-level experiences-Joel Robuchon at the Mansion (3*Michelin), Caesars Palace, and Bellagio in Las Vegas-before starting her own school in 2016. Her creations have earned her several awards and she was named among the 10 Best Chocolatiers in North America by Dessert Professional Magazine.
